String of Pearls Riesling
Bright and effervescent with aromas of spiced green apple, pear and lemon zest.
Produced in the Methode Ancestrale tradition of natural carbonation. The primary alcoholic fermentation was paused by chilling the tank in order to slow yeast metabolism and reproduction. While it was chilled, the wine was bottled and crown-capped, allowing the fermentation to resume as the bottles warmed. After a few months of aging, the bottles were disgorged to remove any yeast sediment and recapped.
