2016 Cabernet Franc
Bold and well-structured with aromas of black cherry, pomegranate, cedar, licorice, and pipe tobacco.
About half of the Cabernet Franc that went into this blend was produced by whole-cluster fermentation. Whole, uncrushed clusters of grapes were fermented under a blanket of CO2, which produced a range of interesting aromatic complexities as well as a more defined tannic structure.
